Vegan Curried Apple Orzo Salad
I love this curried orzo salad! The variation of textures between the soft orzo, crunchy green apples and almonds and chewy raisins is really satisfying. The combination of sweet (golden raisins), spicy (curry), tart (apples) and sour (vinegar and lemon) is tempered by savory peanut oil. So delicious!
This recipe originally came from a neighbor of mine about twenty years ago. I have since lost touch with her, but I have been making this recipe ever since. I have it written down on a piece of lined notebook paper and it has moved cross-country with me.
I wasn't vegan until recently and am super happy that this time-tested favorite fits into my new way of eating without needing any alterations.
It makes a big bowl and tastes good hot, at room temperature or cold, so is great to take to a pot-luck or picnic.
Ingredients
Dressing
- 1 cup peanut oil
- 1/4 cup lemon juice
- 2 teaspoons sea salt
- 1 Tablespoon curry powder
- 1/2 cup white wine vinegar
- 1/2 cup sugar
- 1/2 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- pinch cayenne pepper
Salad
- 1 package dried orzo
- 1/2 cup golden raisins
- 1/2 cup toasted almond slices
- 3/4 cup chopped red onion
- 2 cups diced green apple
Instructions
- Cook the orzo according to the package directions.
- Drain, toss with dressing while hot and then add the other salad ingredients.
- Let stand at room temperature 1-2 hours for flavors to intensify.
