Sweet Potato “Doughnut” Circles

Sweet Potato "Doughnut" Circles

These sweet potato "doughnut" circles are crispy on the outside, light and sweet inside and the skin makes a deliciously crunchy-chewy crust around the edges. No sugar needed…just the lightest scattering of coarse sea salt. Served warm they are reminiscent of doughnuts and are melt-in-your-mouth yummy!

The cooking times above reflect using already baked sweet potatoes. Whenever I bake sweet potatoes I throw a couple extra in the oven that I can then store in the refrigerator for up to 5 days before slicing and using in this recipe.

These are super quick and easy and are great for dessert, breakfast, or passed warm in a basket at brunch. They also make a fantastic afternoon snack.

Ingredients

  • 2 medium sweet potatoes, baked whole with skins on, chilled
  • 3 Tablespoons cornstarch
  • 1 Tablespoon olive oil
  • 1 Tablespoon vegan butter
  • Coarse sea salt (I use Maldon)

Instructions

  1. Slice the sweet potatoes into thick circles, about 1/2-3/4 inches.
  2. Dredge the sweet potato slices in cornstarch, rubbing it into the cut sides and around the edges.
  3. Heat oil and butter in medium skillet over medium-high heat.
    Add sweet potato slices, cooking until golden brown on one side, then flip them and cook until the second side is golden brown (about 10 minutes total).
  4. Remove to plate lined with paper towel and sprinkle with coarse sea salt.
  5. Best served warm!
