Sweet Potato "Doughnut" Circles
These sweet potato "doughnut" circles are crispy on the outside, light and sweet inside and the skin makes a deliciously crunchy-chewy crust around the edges. No sugar needed…just the lightest scattering of coarse sea salt. Served warm they are reminiscent of doughnuts and are melt-in-your-mouth yummy!
The cooking times above reflect using already baked sweet potatoes. Whenever I bake sweet potatoes I throw a couple extra in the oven that I can then store in the refrigerator for up to 5 days before slicing and using in this recipe.
These are super quick and easy and are great for dessert, breakfast, or passed warm in a basket at brunch. They also make a fantastic afternoon snack.
Ingredients
- 2 medium sweet potatoes, baked whole with skins on, chilled
- 3 Tablespoons cornstarch
- 1 Tablespoon olive oil
- 1 Tablespoon vegan butter
- Coarse sea salt (I use Maldon)
Instructions
- Slice the sweet potatoes into thick circles, about 1/2-3/4 inches.
- Dredge the sweet potato slices in cornstarch, rubbing it into the cut sides and around the edges.
- Heat oil and butter in medium skillet over medium-high heat.
Add sweet potato slices, cooking until golden brown on one side, then flip them and cook until the second side is golden brown (about 10 minutes total). - Remove to plate lined with paper towel and sprinkle with coarse sea salt.
- Best served warm!
