New Potatoes with Vegan Cream Filling and Balsamic "Caviar"

Tiny new potatoes are filled with a savory vegan cream, topped with balsamic “caviar” and sprinkled with coarse sea salt and fresh chives. An elegant vegan appetizer that everyone will love!

You can prep this recipe a day in advance, assembling just before serving.

Balsamic “caviar” is made using spherification, a process that might sound complicated but is actually quite easy and very fun to do. Here’s the recipe:
Balsamic Caviar
It keeps for up to 5 days in the refrigerator.

Ingredients

  • 12 small new potatoes
  • 1/4 cup Vegan Ricotta
  • 1/4 cup Cashew Sour Cream
  • 3 Tablespoons Balsamic “Caviar”
  • Snipped fresh chives
  • Coarse sea salt (I use Maldon)
  • Freshly ground black pepper

Instructions

    1. Boil the whole new potatoes in salted water until just tender, about 15-20 minutes. Drain and set aside until cool enough to handle.
    2. Cut a small sliver off of each end of each potato, then cut each potato in half. This will create two identical halves that easily sit flat.
    3. Using a small spoon or tiny melon baller, gently carve out the center of each potato half, leaving a small ring of potato intact around the outside edge and in the bottom. Sprinkle each half with coarse sea salt. Transfer to a serving platter.
    4. Combine vegan ricotta and cashew sour cream in a small bowl. Use a piping bag or small spoon to fill each potato half with the cream mixture.
    5. Top with balsamic “caviar” and snipped fresh chives. Sprinkle with coarse sea salt and freshly ground black pepper.

Notes

You can prep the potatoes (steps 1-3) up to 24 hours in advance, storing the potato halves in the refrigerator covered in plastic wrap. Bring to room temperature just before filling and serving.
