I just love this walnut pate...it's a great addition to any hors d'oeuvres spread. It only takes about 5 minutes of prep and requires absolutely no cooking! You can make it without soaking the walnuts and it will still be delicious - the texture will just be a bit grainier (my husband actally prefers it this way).
I like to keep some in the refrigerator to have as a quick snack or when people stop by on short notice. Serve it alongside crackers or French bread and any of the following garnishes: thinly sliced red onion, capers, lemon wedges, pickled red onions (shown in photo). I use this pate in my Vegan Banh Mi recipe, too!
Ingredients
- 1 1/4 cups raw walnuts
- 2/3 cup water
- 3 Tablespoons liquid aminos
- 2 1/2 Tablespoons lemon juice
- 1 teaspoon chickpea miso
- 1 Tablespoon olive oil
- 2 1/2 Tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
Instructions
- Place walnuts in heatproof bowl and cover with boiling water. Soak for 30 minutes, then drain.
- Add walnuts and all remaining ingredients to blender. Blend on high for several minutes until mixture is smooth. You may need to add more water (1 Tablespoon at a time) and scrape down the sides to help things along.
- Spoon the mixture into a serving ramekin, pressing it down and smoothing it out. Cover with plastic wrap and refrigerate until firm, about an hour.
