Chickpea-Quinoa Burgers
Light and refreshing, these vegan burgers are perfect for warmer weather! Chickpeas, quinoa, red onion and green pepper create patties with a crispy exterior that are filling without being heavy.
Filled with healthy protein and fiber, these burgers are delicious on a classic bun, topped with tomatoes, fresh spinach and fresh basil. They're equally as good eaten with a knife and fork on top of a salad or alongside sliced, raw veggies like avocado, cucmber, tomato and onion.
The trick to having them hold together is to chill the patties in the refrigerator for 30 minutes or longer before baking. Mix them up in the morning and then bake them for lunch or dinner.
1 cup of dry quinoa yields about 3 cups of cooked quinoa. Make it all and use the extra in other recipes, like my Quinoa Salad with Citrus Vinaigrette.
Ingredients
- 2 cups canned chickpeas (about 2 cans), rinsed and drained
- 1 cup cooked quinoa (preferably cooked in vegetable stock)
- 1/2 cup finely chopped green pepper
- 1/2 cup finely chopped red onion
- 1 Tablespoon minced garlic (about 2 large cloves)
- 1 Tablespoon fresh lemon juice
- 1 teaspoon salt
- 1/8 cup vegetable broth
- 1/2 cup bread crumbs or panko crumbs
Instructions
- Process chickpeas in a food processor until broken down into small chunks. You want to leave some texture.
- Transfer chickpeas to a large bowl and add remaining ingredients.
- Pack the mixture into eight tight patties, then cover and refrigerate for at least 30 minutes.
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper and spray lightly with olive oil.
- Place the patties on the baking sheet and spray the tops lightly with olive oil.
- Bake for 15 minutes, then carefully flip each patty and bake for 15 minutes more.
